Ancient Grain Pizza Dough

Who doesn’t love home made Pizza! This Pizza dough is simple to make and is packed full of protein, amino acids, vitamins and minerals. Spelt, an ancient whole grain, is a fantastic alternative to wheat flour as it is easier for our system to digest.

Ingredients

  • 2 cups spelt flour

  • ¾ cup – 1 cup of very warm but not scorching hot water (I end up using just under a cup)

  • 2 Tbsp olive oil

  • 1 packet of instant yeast

  • ½ tsp coconut sugar or honey (if honey dissolves in warm water)

Optional additions:

  • Dried herbs / fresh garlic

Method

  • Whisk all dry ingredients together in a large bowl

  • Add olive oil, sugar/honey to the warm water

  • Mix into dry ingredients

  • Turn out and knead till the dough is no longer rough and has shine to it

  • Return to the bowl and leave to rest in a warm area with a tea towel over the bowl, until the dough has doubled in size

  • Split the dough in half to make two pizzas

  • Roll out your dough and carefully put it on a hot pizza stone. Use a fork to stab holes all over the dough as this releases the steam and stops the dough bubbling up
